Se sofrie con el aceite la cebolla, el pimiento y los ajos&lt;br /&gt;&lt;br /&gt;2. Truco: como es poco aceite para hacer el sofrito yo cuando veo que se me va a pegar le pongo un chorrito pequeño de vino blanco (0p) para cortar la coccion y asi evitar que se me pegue y aparte que le dan mas sabor a la comida pero es opcional.&lt;br /&gt;&lt;br /&gt;2. cuando este el sofrito echamos al caldero todos los mariscos y el pescado y le damos un par de vueltas . Nota: el pulpo yo lo guiso antes y reservo el agua de la coccion lo cuelo y en vez de agua le echo el caldito del pulpo al igual que los mariscos con conchas los cocino antes y guardo el caldo colado para el arroz pero si lo comprais de estos mariscos congelados que ya estan cocidos lo haceis con agua que tambien queda muy bueno.&lt;br /&gt;&lt;br /&gt;3. echamos el agua/caldo y lo dejamos hasta que hierva, le ponemos el colorante la ct de pimenton y la pastilla de caldo de pescado y le damos unas vueltas .&lt;br /&gt;&lt;br /&gt;4. cuando este hirviendo le echamos el arroz , como cuando ponemos el arroz se corta la coccion dejamos otra vez que hierva y le bajamos el fuego a medio- bajo&lt;br /&gt;&lt;br /&gt;5. dejar cocinar el arroz unos 10 - 15 min cuidado que no se pase es preferible dejarlo un pelin crudo y apartarlo del fuego , dejar reposar unos minutos que con el calor se termina de hacer . Con las manos bien limpias lo mezclamos todo bien y lo dejamos ahi un ratillo para que coja bien todos los sabores.
